Walnut Grove Recipes

Honey, Date & Cinnamon Scones

 

Curried butternut squash with peas & spinach



Ingredients
Makes about 12 to 15 scones

  • 450g plain flour
  • 275ml milk
  • 55g butter (cold)
  • 28g baking powder
  • 150g dates (de-stoned)
  • 2 large tbsp honey
  • 1 ½ tsp cinnamon
  • 1 egg (for egg-wash)



Method

1. Cut the butter into cubes and roughly chop the dates. Add to food blender with the flour, baking powder, dates , honey & cinnamon, pulse for about 30 seconds.

2. Add milk and blend - stop the blender as soon as the milk is incorporated.

3. Roll out to a thickness of 2cm on a floured board, and cut out with fluted cutters or if you don't have cutters use a sharp knife. Transfer to a baking sheet and glaze with egg-wash (beaten egg) using a pastry brush.

4. Bake at 180°C until golden brown, and to test if they are cooked through, tap the bottom of one and it should sound hollow.
